OENOLOGY |

The best bunches from the slopes of the Torto and the Távora rivers are selected; the grape bunches are carefully harvested to plastic containers of 20 kilograms; at the winery, the bunches are de-stemmed, the grapes are crushed and the must decanted for 48 hours; then the must is fermented in stainless-steel vats at the controlled temperature of 15ºC; the resulting wine matures and stabilizes by the cold winter action until Spring, in stainless-steel vats; then, around March it is stabilized, filtered and bottled for release after 1 month. |
